Scrambled eggs with tomato. Simple, hot, and forgiving.

What you need

Only 4 things: eggs • tomato • oil or butter • salt
  • 2 eggs
  • 1 tomato
  • 1 tsp oil or butter
  • Pinch of salt

Step 1 of 4
  1. Chop tomato into small pieces.
  2. Heat butter or oil in a pan on medium.
  3. Add tomato and cook for about 30 seconds.
  4. Crack in the eggs and scramble together.
  5. Add salt and eat hot.
Why this works: Hot protein meal, fast enough for tired brains, simple enough not to spiral.
  • Messy tomato chunks are fine. Do not overdo prep.
  • Use the same small pan every time.
  • Good on toast too if you need more carbs.
  • Add cheese if you want it richer.
